This coffee comes to us from Carlos Muñoz. Muñoz is a highly respected coffee producer and quality control specialist based in the fertile Huila highlands of Colombia. Through his project, Ricordi Coffee, he champions smallholder farmers by providing technical guidance and absolute traceability to help them transition into high-earning specialty markets. On his own high-altitude lands, situated between 1,650 and 1,780 meters above sea level, Carlos cultivates premium Arabica varieties like Caturra, Castillo, and Pink Bourbon. This green lot is composed completely of Caturra and Castillo. He enforces a strict 100% hand-picked harvesting methodology, ensuring that workers selectively harvest only the optimally red-ripe cherries from the trees. His signature Washed Huila Regional Blend undergoes a precise 36-hour tank fermentation before being dried slowly on raised African beds for up to 22 days. This meticulous process yields an exceptionally clean cup with a bright acidity and rich sweetness.

This lot is a wonderful daily driver for the cool mornings and pleasant afternoons of early fall. In the cup, look first for notes of red fruit followed by warm sweetness and spices. We taste dried cranberry, molasses, and baking spices.
